📜 What Are Bhajias?

Bhajias are deep-fried slices of potatoes coated in a seasoned chickpea flour (gram flour or besan) batter. Though originally from Indian cuisine, bhajias have been embraced across East Africa and adapted into local food culture — becoming a common sight at street food stalls, weddings, and tea-time tables.

  • ½ tsp turmeric

  • ½ tsp cumin or garam masala (optional)

  • Salt to taste

  1. Wash and slice the potatoes into thin rounds (not too thick, not too thin).

  2. In a bowl, mix gram flour, garlic, ginger, chilies, coriander, turmeric, and salt.

  3. Add water gradually to make a smooth, thick batter.

  4. Dip each potato slice into the batter and coat evenly.

  5. Deep fry in hot oil until golden brown and crisp.

  6. Drain on paper towels and serve hot.
