"Layers of Love: My Biryani Story”

 Where every grain tells a story.

There’s no dish more grand, more comforting, or more celebrated in my kitchen than biryani. Whether it’s a family gathering, Eid celebration, or just a special Sunday lunch, biryani always feels like a feast — not just for the stomach, but for the soul.

Growing up, I remember the excitement that brewed in our home when biryani was on the menu. The air would fill with the aroma of spices, onions sizzling in ghee, and rice steaming on low heat. For hours, flavors would marry under the lid, creating a dish that tasted like tradition and love.

Today, I’m sharing my family’s chicken biryani recipe — spiced to perfection, layered with flavor, and made with heart.


🍗 Chicken Biryani Recipe



Ingredients:

For the Chicken Marinade:

  • 1 kg chicken (cut into pieces)

  • 1 cup plain yogurt

  • 1 tbsp ginger-garlic paste

  • 1 tsp turmeric

  • 1 tsp chili powder

  • 1 tsp garam masala

  • Salt to taste

  • Juice of 1 lemon

For the Rice:

  • 2 cups basmati rice

  • Whole spices (cardamom, cinnamon stick, cloves, bay leaf)

  • Salt

  • Water for boiling

Other Ingredients:

  • 2 onions (thinly sliced and fried until golden)

  • 2 tomatoes (chopped)

  • Fresh coriander & mint leaves (chopped)

  • Saffron soaked in warm milk (or a pinch of yellow food color)

  • Ghee or oil


🥄 Instructions:

  1. Marinate the chicken with all the marinade ingredients for at least 1 hour.

  2. Cook the chicken in oil/ghee until tender and slightly thickened.

  3. Meanwhile, boil the rice with salt and whole spices until 70% cooked. Drain.

  4. In a heavy pot, layer the biryani:

    • First, a layer of chicken

    • Then a layer of rice

    • Sprinkle with fried onions, coriander, mint, and saffron milk

    • Repeat if necessary

  5. Cover the pot with foil or a tight lid. Steam on low (dum) for 20–25 minutes.

  6. Gently mix and serve hot with raita or kachumbari.
