Hi! I’m Zamzam Ahmed, a passionate food lover, storyteller, and the voice behind Taste and Tell. I believe every meal has a memory, and every recipe holds a story worth sharing. ๐Ÿš East African  Pilau Recipe 



Ingredients:

  • 2 cups long-grain rice (e.g., basmati), washed and soaked for 20 minutes

  • 500g beef or goat meat, cubed

  • 1 large onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, minced

  • 2 tomatoes, finely chopped

  • 2–3 tablespoons cooking oil

  • 4 cups water or beef stock

  • Salt to taste

Pilau Masala (Spice Mix):

You can buy premade pilau masala or mix your own:

  • 1 tsp cumin

  • 1 tsp black pepper

  • ½ tsp cinnamon

  • ½ tsp cardamom

  • ½ tsp cloves

  • 1 tsp coriander powder

(Toast the whole spices and grind for best flavor.)


Instructions:

  1. Boil the Meat:
    In a pot, boil the meat with salt and garlic until tender. Set aside with the broth.

  2. Sautรฉ the Onion:
    In a large cooking pot, heat oil. Add chopped onions and cook on low heat until caramelized (deep brown but not burnt). This gives pilau its rich color.

  3. Add Spices:
    Add garlic, ginger, and pilau masala. Stir for 1–2 minutes until fragrant.

  4. Add Tomatoes:
    Add chopped tomatoes and cook until they break down into a paste.

  5. Add Meat:
    Add the boiled meat and stir well. Let it cook for 3–5 minutes to absorb the flavors.

  6. Add Rice:
    Drain the soaked rice and add it to the pot. Mix gently.

  7. Add Broth/Water:
    Pour in 4 cups of hot broth or water. Add salt to taste.

  8. Cook the Rice:
    Bring to a boil, then lower the heat, cover, and simmer for about 20 minutes or until rice is cooked and all liquid is absorbed.

  9. Fluff & Serve:
    Let it rest for 5 minutes. Fluff the rice with a fork and serve hot.
